The 3 grape varietals employed have aromatic similarities but produce a great deal of complementary structure. The Colombard produces fresh, crispy wines; the Sauvignon Blanc brings softness and richness; and the Gros Manseng adds structure and opulence.
Tasting Notes: Brilliant clear color with yellow tints. Expressive, fruity nose with notes of citrus fruits (pink grapefruit, lemon) and exotic fruits (lychee, etc). Associated with the birth of King Henri IV, this sweet wine is rendered golden by the Foehn effect, a dry hot wind blowing from Spain. Partially aged in barrels for 18 months.
Aged for 10 months in stainless steel tanks to preserve the varietal aromas, with 20% done in oak to provide for depth.
Tasting Notes: Dark, deep color. Pleasant aromas of red fruits, black fruits and China ink. Notes of wood, juniper, nutmeg and cedar. Full, sumptuous flavors, with silky tannins. Flavorful finish. The Marcillac appellation is planted with 100% Mansois grapes. It is the most northern wine producing area of the Southwest, against the foothills of the Massif Central. Aged for 10 months in tanks.

The Gaillac climate is the most Mediterranean of the Atlantic appellations. Separate vinification of the varietals, with early blending, then aging in tanks for 10 months.
Estela aims at being the reflection of the tasting impressions that we have at the vineyard just before harvest. Indeed, the fortification allows the full preservation of aromas contained in the grape. The balance between acidity and residual sugars is subtle; it gives this wine a special elegance which will surprise your palate.
Tasting Notes: The bouquet is dominated by aromas of black fruit, thyme, juniper, but also by more complex balsamic notes. The palate surprises by its balance and sweetness, but the latter is rapidly balanced by a frank acidity. The aromas on the nose are also found in the mouth, and combined with the sugars, bring length to this nectar. Sweet, without being too heavy. Pairing: Appetizers, parsley-paste cheeses, bitter chocolate in various forms (cakes, sweets, chocolate nibbles…), pear tart with Roquefort, desserts with cherries, currants and berries or on its own at the end of a meal.
