From hillsides near Lons le Saunier, the terroir is characterized by abundant star-shaped fossils, giving the name of L'Etoile (the star) to this very small appellation.

Domaine Rolet Père & Fils Vin de Paille Arbois 2003
The grapes are dried out during 3 months to concentrate the sugars before starting a slow fermentation process, process which will stop naturally when the wine will reach 15º to 16º of alcohol, conserving 60 to 100 grams of residual sugar. This is followed by 2 years of aging in barrels.
Tasting Notes: Amber color. Strong concentration, the hot 2003 being an ideal year for harvesting Vin de Paille. Preserved fruits dominate the bouquet, dried fruits, figs, apricots, quince. Very concentrated on the palate. Sweet. Pairing: Beautiful as an aperitif, with foie gras, and dessert, or on its own for your pleasure. "The king of wines and the wine of the kings", the yellow wine requires 6 years of aging without racking which give its unique nutty character. In February 2011, a bottle of 1774 Vin Jaune (that's older than the French Revolution!) fetched at a yearly auction in Arbois the record price of 57願 Euros!
Domaine Rolet Père & Fils Poulsard Vieilles Vignes Arbois 2009
Poulsard is one of the oldest Jura indigenous varietals. Aged in stainless steel tanks for 12 months.
Tasting Notes: Dark red color. On the nose, aromas of red fruits, strawberries, cherries, then onto animal and gamy notes, characteristic of the varietal. Good balance, soft tannins, flavors of red fruits with some spices and mint. Pairing: Smoked charcuterie, poultry and grilled meat. This other indigenous varietal is very demanding and shows its best expression on the fat gravels of the Montesserin vineyard in Arbois. Aged 15 months in large oak barrels.
